This dark purple pate will speed up your metabolism. Why?
It gets its colour from anthocyanin, a water-soluble pigment that has been associated with anti-ageing properties. When you see this colour or the shades of blue on naturally occurring vegetables and fruits, you can be sure they will help your urinary tract health, bone formation, memory and metabolism. This pate is receiving its dominating colour from red cabbage. Cabbage being a goitrogen make the version of simmered cabbage instead of raw if you have any kind of thyroid issues.
For simmering the cabbage chop it fine and poor it onto preheated olive oil in a deep pan. The oil should cover the bottom of the pan everywhere, but doesn’t have to be more than 1mm deep. Add salt and simmer it under lid of about half an hour with regular stirring in order to avoid it burning.
For preparing this pate you will need a hand mixer or a little food processor.
The raw version uses 2 red cabbage leaves chopped, 1/2 cup of rucola, 3 slices of red onion, handful of parsley with stems pre-chopped, 100 grams fresh goat cheese, salt and pepper to taste.
Just chop it all fine with the food processor, mix it well, and you are ready to enjoy it! Consider it as a breakfast. You can easily find out that you don’t need to start the day with sweets.
